What You’ll Need

  • 6 large russet potatoes
  • 2 tablespoons of Tasmanian pepperberries, crushed
  • 4 garlic cloves, minced
  • 4 tablespoons of olive oil
  • 1 1/2 teaspoons of sea salt
  • 1 teaspoon of black pepper
  • 1 tablespoon of fresh rosemary, finely chopped
  • 1 tablespoon of fresh thyme, finely chopped

Method

Step One

Start by preheating your oven to 400 degrees Fahrenheit. While your oven is heating, carefully wash your 6 large russet potatoes and pat them dry. There’s no need to peel them – leaving the skins on gives them a nice, rustic appearance and added nutrients.

Cut your now clean potatoes into cubes, or wedges if you prefer. Be sure to keep the sizes consistent, as this will allow for even cooking. Add these to a large mixing bowl.
