What You’ll Need

  • 2.5 cups of Tayberries
  • 2 tablespoons of Lemon Juice
  • 1.5 cups of Granulated Sugar
  • 1 package of Fruit Pectin
  • 0.5 cups of Water

Method

Step One

First, prepare your tayberries by washing them thoroughly under cool water. Remove any stems, leaves, or bad spots. Set them aside to dry.

Step Two

Combine your tayberries and lemon juice in a large pot. Then, crush the berries using a potato masher or the back of a spoon to release their juices. Once you have mashed to your desired consistency, add in the granulated sugar.

Step Three

Heat the mixture over medium-high heat until it reaches a boil, stirring frequently to prevent the sugar from burning on the bottom of the pot. Once it reaches a boil, let it cook for another minute.

In a separate bowl, whisk together the fruit pectin and water until the pectin is fully dissolved. Then, slowly stir this into your pot of boiling tayberries. Continue to stir and heat the jam until it returns to a full, rolling boil.

Step Five

Once your jam has boiled for a minute with the pectin mixture, remove it from the heat. Ladle your jam into sterilized jars, leaving about a quarter inch of head space. Seal the jars tightly.

Step Six

Store your jars in a cool, dark place. They should keep for up to a year. Refrigerate after opening.
