Tepary Bean and Corn Tacos

What You’ll Need

  • 1 cup dried Tepary beans
  • 3 cups water
  • 1 tablespoon olive oil
  • 1/2 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large bell pepper, chopped
  • 2 cups sweetcorn
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 12 small corn tortillas
  • 2 avocados, sliced
  • 1/2 cup fresh cilantro, chopped (optional)
  • Lime wedges, for serving
  • 1 cup fresh salsa

Method

Step One

Begin by rinsing the tepary beans and checking for any debris. Afterwards, add them to a saucepan along with the 3 cups of water. Bring the water to a boil, then reduce the heat and let it simmer. Continue until the beans are tender, which should take about 1-2 hours.

Step Two

While the beans are simmering, heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and minced garlic to the skillet and stir occasionally until they become fragrant and the onions are translucent.

Step Three

Next, add the chopped bell pepper to the skillet and continue to cook until it softens. Now add the sweetcorn, followed by the spices (chili powder, cumin, and smoked paprika) and stir everything together for a couple of minutes.

Step Four

When the beans are cooked and tender, drain them and add to the skillet, mixing with the other ingredients. Continue to cook for another 5 minutes, seasoning with salt and pepper to your liking.

Step Five

Meanwhile, warm your corn tortillas according to the package instructions. When they’re warm and pliable, spoon the bean and vegetable mixture onto each tortilla.

Step Six
