I am excited to share with you a fantastic, tasty, and healthy recipe that my family and I simply adore: the Tepary Bean and Corn Tacos. This delightful dish is a far cry from the traditional Irish stews and New England seafood plates that are often on your dinner table, yet the flavors meld together with the same harmonious grace.
About the Ingredients
Now, let’s talk about what makes this recipe great. For starters, the Tepary beans, which are not only incredibly delicious but also pack a significant nutritional punch. These little beans are a brilliant source of protein and prolonged energy. Their rich fiber content also aids in digestion. Technically a desert crop Native to the southwestern U.S. and Mexico [source], Tepary beans have an untamed, earthy flavor that friends and family back home in Boston love.
Healthy and Delicious
Together, the sweet corn, fresh salsa, and colorful bell pepper add a pop of color and nutrients. Jam-packed with beneficial antioxidants, these produce superstars are an excellent way to boost your immune system. And let’s be honest, who doesn’t love an extra hit of spicy, sweet, and crunchy goodness in their tacos? Laura, my beautiful, health-conscious fiancé, sure does, and trust me: she’s got good taste.
Don’t forget the spices: A sprinkling of chili powder, cumin, and smoked paprika — they take these plant-based tacos from good to ‘can’t-stop-eating’ fantastic. And remember, whether you’re impressing dinner guests or simply cooking for your loved ones (like my little boy), flavor is paramount.
Arriba Taco Time!
The Tepary Bean and Corn Tacos go brilliantly with a side of cilantro lime quinoa or a cooling guacamole for a wholesome, satisfying meal. If you want to venture out for even more flavor, pair them with a zesty jalapeno coleslaw or oven-roasted sweet potatoes.
Are you getting hungry yet?
So there you have it, a healthful and scrumptious recipe that is a bit of a departure from my usual New England seafood or Irish comfort food, but equally wonderful. Do give these Tepary Bean and Corn Tacos a whirl, you won’t regret it!
What You’ll Need
- 1 cup dried Tepary beans
- 3 cups water
- 1 tablespoon olive oil
- 1/2 large onion, chopped
- 2 cloves garlic, minced
- 1 large bell pepper, chopped
- 2 cups sweetcorn
- 1 tablespoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 12 small corn tortillas
- 2 avocados, sliced
- 1/2 cup fresh cilantro, chopped (optional)
- Lime wedges, for serving
- 1 cup fresh salsa
Method
Step One
Begin by rinsing the tepary beans and checking for any debris. Afterwards, add them to a saucepan along with the 3 cups of water. Bring the water to a boil, then reduce the heat and let it simmer. Continue until the beans are tender, which should take about 1-2 hours.
Step Two
While the beans are simmering, heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and minced garlic to the skillet and stir occasionally until they become fragrant and the onions are translucent.
Step Three
Next, add the chopped bell pepper to the skillet and continue to cook until it softens. Now add the sweetcorn, followed by the spices (chili powder, cumin, and smoked paprika) and stir everything together for a couple of minutes.
Step Four
When the beans are cooked and tender, drain them and add to the skillet, mixing with the other ingredients. Continue to cook for another 5 minutes, seasoning with salt and pepper to your liking.
Step Five
Meanwhile, warm your corn tortillas according to the package instructions. When they’re warm and pliable, spoon the bean and vegetable mixture onto each tortilla.
Step Six
Top the filling in each tortilla with slices of avocado, a spoonful of salsa, and a sprinkle of fresh chopped cilantro if desired. Serve each taco with a wedge of lime on the side for squeezing over the top. Enjoy your delicious Tepary Bean and Corn Tacos!
