What You’ll Need

  • 2 pork tenderloins (around 1.5 pounds each)
  • 3 stalks fresh lemongrass, finely chopped
  • 4 cloves of garlic, minced
  • 2 tablespoons vegetable oil
  • 1/4 cup fish sauce
  • 1/4 cup brown sugar
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon chili powder
  • Salt to taste
  • Pepper to taste
  • 6 cups of steamed jasmine rice
  • Fruit garnish (optional) e.g. strips of mango and pineapple, lime wedges

Method

Step One

First, take the pork tenderloins and trim any excess fat if necessary. Pat them dry with a paper towel and set them aside.

Step Two

Next, you’ll make up your marinade. In a large bowl, combine the finely chopped lemongrass, minced garlic, vegetable oil, fish sauce, brown sugar, fresh lime juice, soy sauce, chili powder, salt, and pepper. Mix these all together until they’re well combined and you have a sort of paste.

Now it’s time to add your pork tenderloins. Put them in the bowl with the marinade and ensure they’re fully coated. Cover the bowl and let them marinate for at least two hours, but if possible, overnight.
