What You’ll Need
- 3 cups extra-firm tofu, drained, pressed, and cut into cubes
- 6 cloves garlic, minced
- 6 small red chillies, finely chopped
- 2 large red bell peppers, sliced
- 2 large green bell peppers, sliced
- 2 medium onions, sliced
- 2 cups Thai basil leaves
- 4 Tablespoons vegetable oil
- 4 Tablespoons light soy sauce
- 4 Tablespoons oyster sauce
- 2 Tablespoons dark soy sauce
- 2 Tablespoons white sugar
- 2 teaspoons cornstarch dissolved in 4 Tablespoons water
- Cooked Jasmine rice, for serving
Method
Step One
To begin with, heat 2 tablespoons of vegetable oil in a large wok or frying pan over medium-high heat. Add the tofu cubes to the pan and stir fry until they are golden brown on all sides. This should take about 5-7 minutes. Once done, remove the tofu from the pan and set aside.
Step Two
In the same wok or frying pan, add the remaining 2 tablespoons of vegetable oil. To this, add the minced garlic and chopped red chillies. Stir fry for about 2 minutes, or until the garlic becomes fragrant. Be careful not to let the garlic burn.
Step Three
Next, add the sliced red and green bell peppers and sliced onions to the wok. Stir fry for a further 5 minutes until the vegetables have softened.
Step Four
In a small bowl, combine the light soy sauce, oyster sauce, dark soy sauce, and white sugar. Stir until the sugar is dissolved. Pour this sauce over the cooked vegetables in the wok and stir well to coat.
Step Five
Return the fried tofu cubes to the wok and add the Thai basil leaves as well. Give everything a good stir to ensure that the tofu and basil are well incorporated with the other ingredients and the sauce.
Step Six
Finally, stir in the cornstarch-water mixture. This will help to thicken up the sauce a bit. Continue to cook for another 2-3 minutes until the sauce has thickened to your likeness.
