The Health Benefits

Part of my passion for this Tofu Scramble with Red Rice Powder lies in its impressive health benefits. Tofu is a unique source of plant-based protein, making it a great choice for both vegetarians and those looking to diversify their protein intake. Red rice powder, a much less frequently used ingredient, is a powerhouse of antioxidants and fiber. The cup of mixed fruit not only brings a natural sweetness to this dish but also provides an array of vitamins and antioxidants. To top it off, the olive oil and garlic are known for their heart health benefits. This recipe is a testament that good tasting food can also be good for you!

A Unique Culinary Experience

One cannot fail to acknowledge the transformative power of food through this dish. What might on the surface seem like your standard scrambled tofu breakfast, actually transcends culinary boundaries when combined with the deep, nutty flavor of red rice powder. This ingredient, although unconventional, provides a distinctive taste that sets this recipe apart, drawn from the staple grain of my Italian heritage.

This recipe reminds me of a dish I enjoyed on my visits to my grandparents’ home—a rustic yet flavorful Italian risotto enriched with an array of colorful vegetables. Just like that traditional plate, this tofu scramble is a canvas for creativity – you could pair it with whole grain toast or a fresh green salad for a hearty and complete meal.

An added treat, of course, on those special days when I’ve been hiking—my favorite pastime—is bracing the outdoors, cherishing nature’s raw beauty, and then returning home to a warm, wholesome and satisfying tofu scramble. A perfect ode to nature, it is as nourishing as it is delicious.

What You’ll Need

  • 1 block (14 ounces) of tofu
  • 1 tablespoon of olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup of assorted mix of cut fruits (like strawberries, blueberries, banana)
  • 1/2 teaspoon turmeric
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons of red rice powder
  • 1/2 cup of fresh cilantro, chopped
  • 2 green onions, chopped
ALLERGENS: Tofu, Garlic

Method

Step One

Drain the tofu and pat it dry using a kitchen towel. Once dry, crumble the tofu into small pieces, resembling scrambled eggs.

Step Two

In a large non-stick skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it turns translucent and soft. This should take about 5 minutes.

Step Three

Add the minced garlic and diced bell pepper to the skillet. Continue to sauté until the bell pepper is tender.

Step Four

Now, stir in the crumbled tofu, turmeric, salt, and pepper. Cook while stirring occasionally until the tofu is heated through. This might take another 5 to 7 minutes.

Step Five

Sprinkle the red rice powder over the tofu mixture. Stir well to combine and coat all ingredients with the powder. Allow the mixture to cook for an additional 2-3 minutes.

Step Six

Turn off the heat and add the chopped cilantro and green onions. Stir to combine. Taste and adjust the seasoning, adding more salt or pepper as needed.

Step Seven

Finally, sprinkle the assorted fruits over the tofu scramble. Serve warm and enjoy your nutritious Tofu Scramble with Red Rice Powder. This dish is perfect for a healthy breakfast or brunch.
