What You’ll Need

  • 5 large tomatillos, husked and minced
  • 2 ripe avocados, peeled and diced
  • 1 white onion, diced
  • 2 cucumbers, peeled and chopped
  • 4 garlic cloves, minced
  • 2 green bell peppers, diced
  • 1 jalapeno, seeded and minced
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup of cherry tomatoes for garnish
  • 6 lime wedges for serving

Method

Step One

Start by washing all the fresh ingredients properly. Then, finely mince the tomatillos, dice the avocados and onion, chop the cucumbers, mince the garlic, dice the green bell peppers, and mince the seeded jalapeno. Be careful while handling the jalapeno to avoid any skin irritation.

Step Two

In a large bowl, squeeze the juice from one lime. To this, add the chopped cilantro, minced tomatillos, diced avocado, diced onion, chopped cucumber, minced garlic, diced green bell peppers, and the minced jalapeno.

Step Three

Add in the vegetable broth into the bowl with all the ingredients. Then, pour in the olive oil and season with salt and pepper according to your taste. Stir all the ingredients together until well combined.

Step Four

Using a high-speed blender or food processor, puree the mixture in batches until the soup is smooth and well combined. You may need to scrape down the sides a few times to ensure all the ingredients are well incorporated. Once done, refrigerate the soup for a few hours until chilled.

Step Five

When ready to serve, garnish the soup with cherry tomatoes and a dash of fresh cilantro. Serve the soup with lime wedges on the side and enjoy the refreshing taste of your Tomatillo Gazpacho Soup.
