Why I Love British Tomato and Feta Tart
There’s a certain warmth, a certain charm to this British cuisine classic – the Tomato and Feta Tart. The contrasting, yet harmonious mingling of these Mediterranean ingredients makes this dish truly remarkable. One bite and you’ll understand my fascination for this flavour-packed pastry.
A Savory Journey
My appreciation for this tart began when I first tasted it in a small baker’s shop in London. Its vibrant, robust flavours reminded me of a simpler yet flavour-packed dish I would often serve beside a fresh, cold water trout – a staple in my high-altitude Colorado cooking. Recognising a recipe of true potential, I took it upon myself to recreate it with a personal touch. And boy, did it deliver.
Inspired by renowned British celebrity chef Gordon Ramsay, this tart recipe excels in using simple ingredients while maximizing their impact. A simple bite takes you on a flavorful journey – from the sweet cherry tomatoes, through the zingy feta cheese, to the fragrant basil, each providing their distinct elements to the overall symphony of flavours.
Perfect Pairings
This tart is notably versatile and pairs well with several dishes, making it a magnificent addition to practically any meal layout. Paired with a crisp green salad and a chilled glass of white wine – it’s the perfect light summer dinner that’s sure to impress. Alternatively, you could serve the Tomato and Feta Tart, as a satisfying side to a roasted chicken for a heartier meal. It’s similarly delicious at room temperature, making it a fantastic option for picnics or lunchboxes.
The charm of this Tomato and Feta Tart lies in its ability to gracefully carry the flavours of the simple ingredients it houses. It’s a testament to the beauty of minimalism, and it’s a recipe that holds a special place in my culinary heart. I hope you enjoy it as much as I do, and that it becomes a favourite in your kitchen too.
What You’ll Need
- 1 ready-made puff pastry sheet
- 1 large egg, beaten
- 2 cups cherry tomatoes
- 3/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
- 1/2 cup fresh basil leaves, for garnish
Method
Step One
Preheat your oven to 200°C (180°C fan). Lay out the puff pastry sheet on a baking sheet lined with parchment paper and prick all over with a fork, leaving a 1-inch border around the edges unpricked. Brush the border with the beaten egg.
Step Two
Bake the puff pastry in the preheated oven for about 10 minutes, or until it has puffed up and turned golden brown.
Step Three
While the puff pastry is baking, heat the olive oil in a skillet over medium heat. Add the garlic and sauté until fragrant. Add the cherry tomatoes, thyme, salt, and pepper and cook for a couple of minutes until the tomatoes start to soften.
Step Four
Once the pastry has baked, carefully press down the center portion, leaving the border puffed. Spread the softened tomatoes evenly over the pressed down area and sprinkle the crumbled feta cheese on top.
Step Five
Return the tart to the oven and bake for another 10-15 minutes, or until the feta cheese has melted and the pastry is golden brown.
Step Six
Once baked, remove the tart from the oven and let it cool slightly. Sprinkle fresh basil leaves over the top before slicing and serving.
