Recognising a recipe of true potential, I took it upon myself to recreate it with a personal touch. And boy, did it deliver.

What You’ll Need

  • 1 ready-made puff pastry sheet
  • 1 large egg, beaten
  • 2 cups cherry tomatoes
  • 3/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste
  • 1/2 cup fresh basil leaves, for garnish

Method

Step One

Preheat your oven to 200°C (180°C fan). Lay out the puff pastry sheet on a baking sheet lined with parchment paper and prick all over with a fork, leaving a 1-inch border around the edges unpricked. Brush the border with the beaten egg.

Step Two

Bake the puff pastry in the preheated oven for about 10 minutes, or until it has puffed up and turned golden brown.

Step Three

While the puff pastry is baking, heat the olive oil in a skillet over medium heat. Add the garlic and sauté until fragrant. Add the cherry tomatoes, thyme, salt, and pepper and cook for a couple of minutes until the tomatoes start to soften.

Step Four

Once the pastry has baked, carefully press down the center portion, leaving the border puffed. Spread the softened tomatoes evenly over the pressed down area and sprinkle the crumbled feta cheese on top.

Step Five

Return the tart to the oven and bake for another 10-15 minutes, or until the feta cheese has melted and the pastry is golden brown.

Step Six

Once baked, remove the tart from the oven and let it cool slightly. Sprinkle fresh basil leaves over the top before slicing and serving.
