What You’ll Need
- 6 tilapia fillets or other white fish (about 4 ounces each)
- 2 tablespoons extra-virgin olive oil
- 2 cloves garlic, minced
- 1 large onion, thinly sliced
- 4 large tomatoes, diced
- 3 tablespoons tomato paste
- 1 cup fresh basil leaves, loosely packed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 cup fish broth or water
- 2 tablespoons fresh lemon juice
- Fresh basil leaves, for garnish
- 1 lemon, cut into wedges, for serving
Method
Step One
Preheat your oven to 375 degrees Fahrenheit.
Step Two
In a large skillet, heat the extra-virgin olive oil over medium heat. Add the minced garlic and thinly sliced onion. Saute until the onion becomes translucent, this should take about 5 minutes.
Step Three
Add the diced tomatoes, tomato paste, and basil leaves to the skillet. Stir well to combine these ingredients and allow them to cook for another 5 minutes.
