What You’ll Need

  • 6 Troyes Andouillette sausages
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves of garlic, finely chopped
  • 2 large onions, thinly sliced
  • 1 cup white wine (Chardonnay or Sauvignon Blanc)
  • 2 cups good-quality beef broth
  • 3 tablespoons Dijon mustard
  • 2 bay leaves
  • Several sprigs of fresh thyme
  • 1 tablespoon whole grain mustard
  • Salt and pepper to taste
  • Freshly chopped parsley for garnishing
  • Crusty French bread to serve

Method

Step One

Begin by warming the extra-virgin olive oil in a large skillet over a medium-high heat. Once the oil is heated, add the Troyes Andouillette sausages to the pan and sear them until they become fully browned on all sides. This should take around 10 minutes in total. When the sausages are sufficiently browned, remove them from the skillet and set them aside.

Step Two

In the same skillet, add the sliced onions and chopped garlic. Cook these over a medium heat until they are soft and have begun to caramelize. This should take approximately 5 to 7 minutes.

Step Three

At this stage, you can reintroduce the browned sausages back into the skillet with the onions and garlic. Stir the ingredients together and then pour in the white wine. Make sure to scrape the bottom of the skillet to dislodge any of the tasty caramelized bits. Allow this mixture to simmer for a few minutes so that the alcohol in the wine can evaporate.

Step Four

Next, add the beef broth, Dijon mustard, bay leaves, fresh thyme, whole grain mustard, salt, and pepper into the skillet. Stir everything until well combined and ensure the sausages are covered with the liquid. Bring the mixture to a simmer, then reduce the heat to low and cover the skillet. Let the sausages cook in this broth for about 40 minutes.

Step Five

Finally, garnish the sausage dish with freshly chopped parsley. Serve your Troyes Andouillette Sausage hot, with a side of crusty French bread for dipping in the flavorful broth.
