An All-seasons Comfort Food

This Turnip Greens Stew echoes the ethos of Japanese and Pacific Northwest cuisine; both take pride in highlighting the natural flavours of the ingredients and respect for the seasons. The bright and hearty nature of this stew makes it as enjoyable on a breezy spring afternoon as it is on a chilly winter’s night. It carries notes of similarity to Nabemono, a classic Japanese hot pot dish known also for its comforting and belly-warming aspects.

Not Just Taste, But Health Too

But the beauty of this dish isn’t just in its taste. Packed with the goodness of fresh ingredients, its nutritional benefits are also noteworthy. The turnip greens are an excellent source of vitamins A, C, and K, while the apples offer dietary fiber and Vitamin C. Onions and garlic add to this mix their powerful antioxidants. The choice of smoked sausage brings in protein, and the broth, especially if homemade, amps up the nutrient scale.

Serving this stew with a side of boiled brown rice or a freshly toasted slice of sourdough would complete the meal. Therefore, whether you’re looking to delight your taste buds or feed your body nutritiously, this Turnip Greens Stew stands as a winning choice. Enjoy the crafting process as much as you would the end result. After all, as the Japanese say – in cooking, ‘heart’ (kokoro) is the essential ingredient.

What You’ll Need

  • 2 pounds of fresh turnip greens
  • 2 large apples, peeled and diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 large turnip, peeled and diced
  • 1 cup of fresh tomatoes, diced
  • 2 quarts of chicken broth
  • 1 pound of smoked sausage, sliced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of olive oil
  • 1 tablespoon of apple cider vinegar
ALLERGENS: Apples, onion, garlic, chicken broth, smoked sausage

Method

Step One

Begin by preparing your ingredients; wash the 2 pounds of fresh turnip greens thoroughly and slice them. Peel and dice the 2 large apples, 1 large onion, and 1 large turnip. Mince the 4 cloves of garlic and dice 1 cup of fresh tomatoes. Slice the 1 pound of smoked sausage.

Step Two

Next, heat up 2 tablespoons of olive oil in a large pot over medium heat. Once the oil is hot, add the sliced smoked sausage. Cook this until it is browned, stirring it occasionally for an even cook.

Step Three

After browning the sausage, add the diced onions and minced garlic to the same pot. Cook these until the onions have caramelized and are translucent. This will likely take about 5 minutes.

Step Four

Now, add in the diced apples and turnips to the pot. Continue to stir and cook everything until the turnips begin to soften. This should take about 7 – 10 minutes.

Step Five

Once the turnips have softened, add in the chicken broth, diced tomatoes, and the sliced turnip greens. Stir everything together, then add 1 teaspoon of salt and 1/2 teaspoon of black pepper. Once everything is mixed well, bring the mixture to a boil.

Step Six

Once boiling, reduce the heat to low and allow the stew to simmer. Continue to cook it until the turnip greens are well cooked and the apple and turnip pieces are tender. This will likely take about 40 minutes.

Step Seven

Finally, after the stew has simmered and the ingredients are cooked to the desired tenderness, add 1 tablespoon of apple cider vinegar. Stir this in, and let the stew sit for about 5 minutes before serving. Adjust any seasonings as needed and enjoy.
