What You’ll Need

  • 3 Ugli fruits
  • 1/4 cup of lemon juice
  • 2 1/2 cups of water
  • 1 package (1.75 oz) of powdered fruit pectin
  • 4 1/2 cups of granulated sugar
  • 6 sterilized jam jars with lids

Method

Step One

Begin by washing the Ugli fruits thoroughly. Cut them into quarters, remove the seeds, and then peel off the skin. Make sure to take off as much of the white pith as possible as it can make the jam bitter.

Step Two

Chop the citrus flesh into small pieces and place inside a large pot. Add the water and lemon juice into the pot.

Step Three

Bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 30 minutes until the fruit is soft.

Step Four

Add the powdered fruit pectin into the pot and stir until it’s well incorporated. Make sure there are no lumps remaining.

Step Five

Gradually add the sugar, stirring continuously to ensure it’s thoroughly mixed. Bring the mixture back to a boil, then boil hard for 1 minute.

Step Six

Remove the pot from the heat. Skim off any foam from the surface of the mixture with a metal spoon.

Step Seven

Carefully transfer the hot jam into the sterilized jars. Wipe the rims clean before securing the lids. Leave to cool at room temperature and then store in a cool, dry place.
