What You’ll Need
- 1 lb of Ulluco Potatoes
- 8 Large Eggs
- 1/2 cup of Heavy Cream
- 1 cup of Cheddar Cheese, grated
- 1 Red Bell Pepper, diced
- 1 Green Bell Pepper, diced
- 1 Medium Onion, diced
- 3 Garlic Cloves, minced
- 1/2 cup of Fresh Parsley, chopped
- 1/2 cup of Fresh Basil, chopped
- 1/4 teaspoon of Salt
- 1/4 teaspoon of Pepper
- 2 tablespoons of Olive Oil
Method
Step One
Preheat your oven to 400 degrees F (200 degrees C). While your oven is preheating, wash your Ulluco potatoes thoroughly and then dice them into small, bite-sized pieces.
Step Two
Heat two tablespoons of olive oil in a large, oven-safe skillet over medium-high heat. Add the potatoes, diced bell peppers, onions, and minced garlic to the skillet. Cook, stirring occasionally, until the vegetables have softened. This should take approximately 10-15 minutes.
Step Three
While the vegetables are cooking, you can begin preparing your egg mixture. In a large bowl, beat your eggs until they are well mixed. Add in the heavy cream, grated cheddar cheese, chopped fresh parsley and basil, salt, and pepper. Stir until all the ingredients are thoroughly combined.
Step Four
Once the vegetables in your skillet have softened, pour the egg mixture over them, ensuring a uniform distribution. Continue to cook on the stove for about 5 minutes, or until you can see that the edges of the frittata are starting to set.
Step Five
