What You’ll Need

  • 2 cups of mixed fresh berries (strawberries, raspberries, blueberries)
  • 1/3 cup of granulated sugar
  • 1 tablespoon of lemon juice
  • 1/2 cup of water
  • 1 cup of Greek yogurt
  • 1 teaspoon of pure vanilla extract
  • 6 tablespoons of honey
  • 1 cup of granola

Method

Step One

Begin by combining the mixed fresh berries, granulated sugar, lemon juice and water in a large saucepan. Bring this mixture to a simmer over medium heat, stirring regularly. Continue cooking for about 10-15 minutes or until the berries are soft and the sauce has slightly thickened.

Step Two

In a separate bowl, mix together the Greek yogurt, pure vanilla extract and honey. Stir these ingredients well until they are fully combined.

Step Three

Assemble the parfaits by layering the yoghurt mix, berry sauce and granola alternatively in serving glasses. Begin with a layer of the yoghurt mix at the bottom, followed by a layer of the berry sauce and then a layer of granola. Repeat these layers until the glasses are filled to the top, ensuring to end with a layer of granola for a nice, crunchy finish.

Step Four

Place the assembled parfaits in the fridge for at least an hour before serving. This allows the flavours to meld together and the parfait to set, making it easier to eat. Once they are chilled, serve the Vanilla Berry Parfaits and enjoy!
