Why I Love American Vegan Alfredo Pasta with Artichokes

As an Italian-American raised in the heart of New Jersey, I’ve tasted a myriad of pasta dishes in my life, but none has thrilled my palate in quite the same way as the Vegan Alfredo Pasta with Artichokes. This delightful and heartwarming dish presents an elegant fusion of earthy artichokes, creamy sauce, and perfectly cooked fettuccine that simply explodes with flavor in every bite.

Vegan Alfredo Pasta with Artichokes

Bringing a Classic into the Vegan World

The beautiful thing about Italian cuisine is its inherent versatility. Just as my grandparents taught me, it’s about making the most of what you have, exploring and celebrating the tastes of the season. Vegan Alfredo Pasta with Artichokes is no different. It takes the traditional concept of an indulgent Alfredo dish and turns it on its head, offering a healthier, dairy-free alternative that loses none of the taste or comfort of the original.

While you might not see this dish on a typical Trattoria menu in Italy, inspired American chefs like Ella Woodward, have shown us the amazing possibilities that come with thinking outside of the box. Ella’s creative plant-based meals have definitely influenced the way I approach vegan recipes.

A Symphony of Flavors

What sets Vegan Alfredo Pasta with Artichokes apart is the tantalizingly creamy sauce, whipped up from nutrient-rich ingredients such as cashews and almond milk, lightly seasoned with nutritional yeast, sea salt and a dash of lemon juice – a vegan dream come true!

The slight sweetness of sautéed onions and garlic complements the creaminess of the sauce, while the quartered artichokes lend a pleasingly unique texture and slightly tangy accent. The addition of fresh basil at the end brings a burst of freshness that ties the whole dish together.

If you’re looking for something to pair with this pasta dish, a crisp garden salad or crusty Italian bread works wonders. But truly, Vegan Alfredo Pasta with Artichokes can more than stand on its own.

So, whether you’re a seasoned vegan, considering a plant-based diet, or simply looking for a way to shake up your usual pasta routine, I invite you to try this recipe. Let Vegan Alfredo Pasta with Artichokes transport you to a fusion world where tradition meets innovation, where comfort meets health, and where every bite is a celebration of flavor.

What You’ll Need

  • 1 lb fettuccine pasta
  • 1 cup raw cashews, soaked overnight
  • 2 cups vegetable broth
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 2 tbsp olive oil
  • 1 cup unsweetened almond milk
  • 1/4 cup nutritional yeast
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1 can (14 oz) artichoke hearts, drained and quartered
  • 1/4 cup chopped fresh basil
  • 1 tbsp lemon juice
ALLERGENS: Wheat, Cashews, Almonds

Method

Step One

Start by cooking the fettuccine pasta according to the package instructions. Once cooked, drain and set aside.

Step Two

In a blender, combine the soaked raw cashews and vegetable broth. Blend until smooth. This will form the base for your alfredo sauce.

Step Three

In a large skillet, sauté the minced garlic and diced onion in olive oil over medium heat until the onion becomes translucent.

Step Four

Pour the cashew and vegetable broth mixture into the skillet with the sautéed garlic and onion. Stir well to combine.

Step Five

Add the unsweetened almond milk, nutritional yeast, sea salt, and ground black pepper into the skillet. Stir continuously until the sauce begins to thicken.

Step Six

Stir in the drained and quartered artichoke hearts into the skillet. Allow the sauce to simmer for about 5 minutes to let the artichokes warm.

Step Seven

Turn off the heat and stir in the cooked fettuccine pasta until it is fully coated in the vegan alfredo sauce.

Step Eight

Lastly, stir in the chopped fresh basil and lemon juice. Adjust seasoning with more salt and pepper if needed.

Step Nine

Serve the Vegan Alfredo Pasta with Artichokes warm. Enjoy your delicious homemade vegan dish!
