What You’ll Need
- 1 cup of short grain rice
- 4 cups of water
- 1/2 teaspoon of salt
- 5 cups of unsweetened almond milk
- 1/2 cup of granulated sugar
- 1/2 teaspoon of ground cinnamon
- 1/2 teaspoon of ground cardamom
- 1 teaspoon of vanilla extract
- 1/3 cup of almond slivers, toasted
- 6 dates, pitted and chopped
- Agave syrup, for drizzling (optional)
Method
Step One
Start by rinsing the rice under cold water until the water runs clear. This removes excess starch that can make the rice pudding too sticky.
Step Two
In a large pot, bring the 4 cups of water to a boil along with the 1/2 teaspoon of salt. Add the rinsed rice, reduce heat to medium, and let it simmer for 10-15 minutes, or until the rice is tender.
Step Three
Once the rice is cooked, drain any leftover water and return the rice to the pot. Add the 5 cups of unsweetened almond milk and let it simmer on a low heat. Stir occasionally to prevent the rice from sticking to the bottom of the pot. Allow the mixture to simmer for about 40-50 minutes.
Step Four
After the milk has thickened and the rice has absorbed most of it, add the 1/2 cup of granulated sugar, 1/2 teaspoon of ground cinnamon, 1/2 teaspoon of ground cardamom, and 1 teaspoon of vanilla extract. Stir well to combine and continue cooking for another 10-15 minutes, or until the pudding has thickened to your liking.
Step Five
In the meantime, toast the 1/3 cup of almond slivers in a dry pan on medium heat. Simply put them in the pan, and stir frequently until they start to brown and smell toasted. Remove from heat and let them cool.
Step Six
Chop the 6 dates into small pieces. When the rice pudding is ready, turn off the heat and add the chopped dates and toasted almond slivers. Stir well to combine.
Step Seven
Serve the rice pudding in bowls and drizzle with agave syrup if desired. Enjoy your vegan almond milk rice pudding warm or chilled.
