Method

Step One

Start by soaking the chia seeds in water. This will create what some vegans refer to as a ‘chia egg.’ It will become gel-like and assist in holding your burger patties together. Put the mixture aside for about 5 minutes.

Step Two

While chia seeds are soaking, grab a large mixing bowl and add the vegan ground meat along with the finely chopped onion and garlic, breadcrumbs, barbecue sauce, nutritional yeast (if using), cayenne pepper, smoked paprika, salt and pepper. Set aside.

Finally, assemble your burgers. Spread vegan mayonnaise onto both halves of each wholemeal bun. On the bottom half, layer lettuce, a burger patty with cheese, a slice of beetroot, pineapple, and tomato. Top with the other half of the bun. Repeat with the remaining burgers.
