A Twist on Tradition
Being steeped in the Southern tradition, I find it interesting to explore dishes outside my comfort zone. This vegan cheese steak taco recipe was a delightful change. It reminded me of the tacos we children used to enjoy after a long day playing at the South Carolina coast, only this time with a conscious twist. They marry the comfort of savory cheesesteak with the refreshing simplicity of a taco, all while keeping it 100% plant based. One bite into this, and I promise you will cherish the explosion of flavors.
While there isn’t a specific chef who inspired this particular vegan recipe, I am continuously motivated by the plant-based ingenuity of Chef Chloe Coscarelli. Her inventive take on traditional dishes always spurs me to experiment in my own kitchen.
A Plethora of Flavors
The beauty of this recipe lies in its unique combination of ingredients. The harmony between the Portobello mushrooms, vibrant bell peppers, and caramelized onions is simply divine. And then there’s the homemade vegan cheese sauce that ties all the flavors together, making each bite an adventure in taste.
If you love this vegan recipe, you might also find some inspiration in Vegan Taco Salads or Vegan Nachos. They’re in the same ballpark of flavor profiles and pair well with Vegan Cheesesteak Tacos for a full-on vegan fiesta.
Relish the Experience
One of the best parts about food, apart from savoring it, is the joy of preparing and cooking the dishes. The process of making these Vegan Cheesesteak Tacos offers an enriching cooking experience. It’s not just a recipe; it’s about celebrating colors, aromas, and textures. As you slice the bell peppers and nibble on the crunchy edges, you’ll become part of the recipe’s story.
It’s dishes like these Vegan Cheesesteak Tacos that remind us that food isn’t merely about sustenance; it’s a delightful dance of flavors where there’s always room for creativity and innovation, even while respecting tradition.
What You’ll Need
- 6 Vegan Tortillas
- 1 tablespoon Olive oil
- 3 Yellow Onions, sliced
- 2 Red Bell Peppers, sliced
- 1 Green Bell Pepper, sliced
- 1 pound of Portobello Mushrooms, sliced
- 3 cloves of Garlic, minced
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 6 Vegan Cheeses slices
- Parsley, for garnishing
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Worcestershire Sauce
Method
Step One
In a large pan, heat the olive oil over medium heat. Once it’s hot, add the sliced onions and both type of bell peppers. Cook for about 10 minutes, or until they have softened.
Step Two
Add the sliced Portobello mushrooms to the pan, along with the minced garlic, salt, and black pepper. Continue to cook everything for another 5-7 minutes.
Step Three
Stir in the soy sauce and Worcestershire sauce. Cook until all the vegetables are well coated and cooked down.
Step Four
Take the vegan cheese slices and place them on top of the vegetable mixture in the pan. Cover the pan and allow to cook for another 2-3 minutes, or until the cheese has melted.
Step Five
While the cheese is melting, heat your tortillas. You can do this in a dry pan over medium heat, just until they are warmed and pliable.
Step Six
Once everything is ready, scoop some of the vegetable and cheese mixture onto each tortilla. Garnish with some parsley if desired, then serve. Enjoy your Vegan Cheesesteak Tacos while hot.
