Why I Love Colombian Vegan Colombian Cheese Bread with Oat Milk

From the hearty ranches of Texas to the mountainous terrains of South America, food has always been a universal language that people from all cultures love and appreciate. Today, I invite you to experience the delightful fusion of a traditional Colombian staple translated to modern, plant-based cuisine – the Vegan Colombian Cheese Bread with Oat Milk.

A Gourmet Journey Across Borders

Growing up, my memories are rich with the flavors of my native Texas cuisine – hearty meat-centric meals, spicy Tex-Mex influences, and an abundance of love and family on every plate. But as a food lover, I have always been curious to explore different gastronomic horizons. Every now and then, I like to step outside these flour-dusted Texan footprints to experience what other parts of the globe have to offer. That’s how I stumbled upon this recipe – a nod to the traditional Colombian cheese bread or ‘pandebono.

Vegan Colombian Cheese Bread with Oat Milk

Marrying Tradition with Innovation

The original recipe for Colombian cheese bread is a glutinous delight – soft, cheesy, and subtly sweet. Yet, I departed from tradition and introduced a vegan twist, removing cheese from the equation and replacing it with a mixture of nutritional yeast and tapioca and potato starches. I removed traditional milk, and in its place, oat milk adds a unique flavor and supports a more ethical and environmentally friendly form of cooking.

What I love most about this Vegan Colombian Cheese Bread with Oat Milk recipe is how small adjustments can create an entirely new and refreshing experience while still honoring traditional nuances. The ingredients list includes:

  • 1 cup Tapioca Starch
  • 3/4 cup Potato Starch
  • 1/4 cup Coconut Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Sea Salt
  • 2 tablespoons Nutritional Yeast
  • 1/2 cup Oat Milk
  • 1/4 cup Coconut Oil
  • 1 tablespoon Apple Cider Vinegar
  • 2 tablespoons Ground Chia Seeds
  • 6 tablespoons Water

My inspiration behind this particular creation stems from an admiration for renowned chef José Andrés and his masterful ability to create authentic and extraordinary meals with a touch of modernism. While not exclusively vegan, his innovation in the kitchen has inspired me to explore beyond the comforts of my familiar culinary borders.

The Vegan Colombian Cheese Bread with Oat Milk is more than just a recipe—it’s a love letter to the past that simultaneously embraces the future of food. It’s an adventure of flavors baked into a bite-sized wonder. Here’s to countless more culinary adventures—together.

What You’ll Need

  • 1 cup Tapioca Starch
  • 3/4 cup Potato Starch
  • 1/4 cup Coconut Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Sea Salt
  • 2 tablespoons Nutritional Yeast
  • 1/2 cup Oat Milk
  • 1/4 cup Coconut Oil
  • 1 tablespoon Apple Cider Vinegar
  • 2 tablespoons Ground Chia Seeds
  • 6 tablespoons Water
ALLERGENS: Coconut

Method

Step One

Preheat your oven to 375 degrees Fahrenheit. Meanwhile, line a baking sheet with parchment paper and set it aside.

Step Two

In a large bowl, combine the tapioca starch, potato starch, coconut flour, baking powder, sea salt, and nutritional yeast. Ensure they are well mixed together.

Step Three

In a small saucepan on medium heat, gently heat the oat milk and coconut oil until the coconut oil is completely melted. Once melted, remove from heat.

Step Four

In a separate small bowl, combine the ground chia seeds and water to make a chia seed ‘egg’. Allow it to sit for a few minutes until it takes on a gel-like consistency.

Step Five

Pour the warm oat milk and coconut oil mixture into the large bowl of dry ingredients. Add in the apple cider vinegar and chia seed ‘egg’. Stir well until all ingredients are fully incorporated and a slightly sticky dough forms.

Step Six

Using clean hands, form the dough into balls about the size of a golf ball. Place each dough ball onto the lined baking sheet, ensuring there is sufficient space between each one as they will expand slightly during baking.

Step Seven

Place the baking sheet into the preheated oven and bake the cheese bread for about 20-25 minutes, or until they are slightly golden and firm to the touch.

Step Eight

Remove the cheese bread from the oven and allow them to cool slightly before serving. Enjoy your vegan Colombian cheese bread!
