Why I Love Argentine Vegan Gramajo-Style Scrambled Eggs
Vegan Gramajo-Style Scrambled Eggs, or ‘Revuelto Gramajo’ as it’s lovingly known in Argentina, is a dish that effortlessly brings the farm-to-table freshness I love immensely. When it comes to capturing the wholesomeness of fresh produce, this recipe truly shines. By mixing together the inviting hues of bell peppers and onions, the savory bite of vegan ham, and the textural delight of crumbled tofu, this recipe is an eclectic feast of flavors that seamlessly encompasses the vitality of plant-based delights.
A Loving Tribute to Argentina’s Revuelto Gramajo
While my heart lies deep within the expanses of Nebraska’s cornfields, I cannot deny the immense love I have for exploring a wider spectrum of global cuisine. This recipe embodies my appreciation for the hearty Argentinian comfort food, yet it’s uniquely adapted by the inclusion of vegan substitutes without compromising the dish’s depth and authenticity. The original recipe, popularized by Colonel Artemio Gramajo, has been given a warm, plant-based embrace in this version, which I find incredibly liberating.
A Symphony of Flavors
The Vegan Gramajo-Style Scrambled Eggs is a dish that glows with the vibrance of its components. As an avid cook who has an immense affinity for Nebraska’s comfort food delicacies, this Argentine classic has charmed me with its simple, yet rich composition. It carries a beautiful balance between the delicate richness of crumbled tofu and the hearty robustness of the vegan ham. Not to mention, the slightly caramelized onions and green bell peppers inject an exciting hint of sweetness that dances gracefully with the savory elements.
This dish works well as a standalone meal or can seamlessly blend into an elaborate brunch spread. Try pairing it with a refreshing side salad or serve it along with some crusty bread to create a satisfying, hearty meal.
Inspired by Wendy Hargreaves, the Vegan Gramajo-Style Scrambled Eggs is a testament to embracing diverse culinary influences while staying true to one’s roots. I love the fact that the recipe maintains its original essence while incorporating a plant-based twist.
Whether you’re sitting down to a quiet dinner or hosting a grand family brunch, the Vegan Gramajo-Style Scrambled Eggs captures the essence of heartland cooking with a delightful global spin. Its wholesome, fresh, and comforting spirit is precisely why it remains one of my favorite recipes.
What You’ll Need
- 2 tablespoon olive oil
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 2 green bell peppers, finely chopped
- 4 cups of diced vegan ham
- 6 cups of thinly sliced vegan fried potatoes
- 3 tablespoons nutritional yeast
- 14 oz firm tofu, drained and crumbled
- 1/2 cup unsweetened almond milk
- Salt and pepper to taste
- 2 tablespoons chopped parsley for garnish
Method
Step One
Begin by heating the olive oil in a large frying pan over medium heat. Once the oil is hot, add the finely chopped onion and minced garlic. Sauté these ingredients until they are soft, which should take about 5 minutes.
Step Two
Next, add the finely chopped green bell peppers and diced vegan ham to the pan. Cook this mixture, stirring frequently, for about 10 minutes or until the bell peppers become soft and the vegan ham becomes slightly browned.
Step Three
Add the thinly sliced vegan fried potatoes to the pan. Continue cooking the mixture for another 5 to 10 minutes, stirring occasionally.
Step Four
In a small bowl, combine the nutritional yeast, crumbled tofu, and unsweetened almond milk. Stir these ingredients together until they are well combined. Then, pour this mixture over the ingredients in the pan.
Step Five
Cook the entire mixture for about 10 minutes, or until the tofu begins to look scrambled. Be sure to stir the mixture occasionally during this step to prevent it from sticking to the pan.
Step Six
Season the scramble with salt and pepper to taste. Then, remove the pan from the heat.
Step Seven
Before serving, garnish the Vegan Gramajo-Style Scrambled Eggs with chopped parsley. Enjoy your meal hot!
