With a nod to Swiss cuisine, this recipe is a vegan reimagining of the traditional Gruyère cheese, renowned for its distinctive, rich, creamy flavor. What You’ll Need

  • 1 cup of whole grain flour
  • 1/2 cup of almond flour
  • 1/4 cup of cold vegan margarine
  • 1/2 teaspoon of salt
  • 3 tablespoons of cold water
  • 2 large onions, thinly sliced
  • 3 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 teaspoon of sugar
  • 1.5 cups of raw cashews, soaked in water for 2 hours
  • 1/3 cup of nutritional yeast
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1.5 teaspoons of sea salt
  • 1 tablespoon of lemon juice
  • 3/4 cup of water
  • 1.5 tablespoons of tapioca starch
  • 1 teaspoon of agar agar powder
ALLERGENS: Tree nuts (almond, cashew), wheat

Method

Step One

Combine the whole grain flour, almond flour, vegan margarine and 1/2 teaspoon of salt in a bowl. Work the mixture with your fingers until it becomes crumbly. Pour in the cold water and knead until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least an hour.

Step Two

Next, move on to the filling. Sauté the thinly sliced onions in olive oil over medium heat. Add 1 teaspoon of salt, black pepper, and sugar to the onions. Continue to cook until the onions turn brown and caramelized. Remove from heat and set aside.

Step Three

In a blender, combine the soaked and drained cashews, nutritional yeast, garlic powder, onion powder, sea salt, lemon juice, and water. Blend on high until the mixture is completely smooth.

Step Four

Transfer the blended mixture to a saucepan and add the tapioca starch and agar agar powder. Stir the mixture continuously over medium heat until it begins to thicken. Once thickened, remove from heat.

Step Five

Preheat your oven to 350°F (175°C). Roll out the chilled dough to fit a 9-inch pie dish. Press the dough into the dish, making sure it is evenly distributed.

Step Six

Spread the caramelized onions over the dough. Then, pour the cashew mixture over the onions. Use a spoon or spatula to spread it evenly.

Step Seven

Bake the quiche in the preheated oven for about 35-40 minutes, or until the top is golden brown and the crust is fully cooked. Allow it to cool before slicing and serving. Enjoy your Vegan Gruyere and Caramelized Onion Quiche!
