Why I Love Mexican Vegan Mango and Pineapple Salsa

Vegan Mango and Pineapple Salsa

As a seasoned culinary explorer, I’ve always loved to experiment with recipe crossovers from different cultures. Today’s recipe, Vegan Mango and Pineapple Salsa, is an extraordinarily vibrant and tasty dish from Mexico that has quickly become a favorite of mine. Not every recipe I create is tied directly to my Japanese and Northwest roots, but I always bring my ethic of exploring fresh, simple ingredients to every culinary exploration.

Flavors of the Tropics

This salsa recipe is a beautiful blend of sweet, tangy, and spicy flavors. The tangy tropical sweetness of ripe mangos and pineapples is perfectly balanced with the bright and spicy notes of fresh chili and onion. The addition of cilantro adds a hint of refreshing herbaceousness. It’s these bold, fresh flavors that make this Vegan Mango and Pineapple Salsa such a delight.

Serving Suggestions

What I love about this salsa is its versatility. With its sweet and savory profile, this salsa would make an excellent addition to a range of dishes. It serves as a fantastic
fish taco topping, or a tangy accompaniment to
grilled chicken. The salsa is also fantastic when simply scooped up with tortilla chips, or you could even use it as a topping for a
crunchy black bean salad.

Naturally vegan and gluten-free, this dish is a wonderful delight for everyone, so it’s my go-to for entertaining guests of differing dietary preferences.

A Salsa with a Global Twist

I may have been inspired by the classics for this salsa, like the one from
Mely Martinez, a talented chef who celebrates the vibrant flavors of traditional Mexican cuisine, but I couldn’t help giving it my own personal twist. My particular touch? Japanese Yuzu. The unique citrus flavor adds a new layer of intrigue to the tropical salsa, breathing new life into an already-gorgeous recipe.

So there you have it. The Vegan Mango and Pineapple Salsa – a fantastic Mexican recipe with a hint of my dual heritage and a reflection of my love for fresh and vivacious flavors. Enjoy making, sharing, and of course, devouring this flavorful delight.

What You’ll Need

  • 2 large ripe mangos, peeled, pitted and diced
  • 1 large ripe pineapple, peeled, cored and diced
  • 1 medium red bell pepper, chopped
  • 1/2 cup chopped red onion
  • 1/4 cup fresh cilantro leaves, finely chopped
  • 1 large jalapeño pepper, seeded and finely chopped
  • 1/4 cup fresh lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
ALLERGENS: The recipe does not contain any recognized common allergens. However, individuals can have specific allergies to any ingredient.

Method

Step One

Begin by preparing your fruits. For the mangos and pineapple, start by peeling them. Once peeled, remove the pits from the mangos and core the pineapple. Dice both the mangos and pineapple into small pieces — they should be about the same size for consistency in your salsa.

Step Two

Next, move on to the vegetables. Start by chopping the red bell pepper into small pieces. Do the same with the red onion. Ensure you have about 1/2 cup of the chopped red onion to keep flavors balanced.

Step Three

Now, tackle the cilantro and the jalapeño pepper. Rinse your cilantro leaves, gently pat them dry, and then finely chop them until you have about 1/4 cup. For the jalapeño pepper, remove the seeds to manage the heat level, then finely chop it as well.

Step Four

In a large bowl, combine your diced mangos, pineapple, chopped red bell pepper, red onion, cilantro leaves, and jalapeño pepper. Mix them together gently to start blending the flavors.

Step Five

Lastly, add the fresh lime juice, salt, and black pepper to the fruits and vegetables mixture. Stir everything until well combined, ensuring the flavors are evenly distributed throughout your salsa.

Step Six

Let your mango and pineapple salsa chill for a bit in the refrigerator before serving. This will allow the flavors to mingle further, giving you a salsa that’s bursting with tasty, tropical character. Serve with your favorite vegan chips or as a topping to vegan dishes for a refreshing tang!
