What You’ll Need

  • 6 large wholemeal rolls
  • 18 slice of vegan Cheddar cheese
  • 6 tablespoons of vegan butter
  • 2 cups pickled onions
  • 1.5 cups pickled gherkins
  • 3 large tomatoes, sliced
  • 6 large spring onions, trimmed and cleaned
  • 18 radishes, halved
  • 1.5 cups grated carrot
  • 1.5 cups beetroot, sliced
  • 1.5 cups celery sticks
  • 1.5 cups cucumber slices
  • 6 handfuls of lettuce leaves
  • 6 tablespoons of apple chutney
  • 6 teaspoons of whole grain mustard

Method

Step One

Start by preparing all of your vegetables for the platter. Slice the tomatoes, half the radishes, grate the carrot, slice the beetroot, clean and trim the spring onions, and cut the celery and cucumber into sticks. Arrange your lettuce leaves onto your platter.

Step Two

Open your wholemeal rolls and spread each side generously with vegan butter. On one side of the roll, lay three slices of vegan cheddar cheese. Close the roll and place it centrally on the platter.

Step Three

Arrange your prepared vegetables around the roll on the platter. Remember to evenly distribute colors and types of vegetables to make the platter appealing.

Step Four

In separate small bowls, place two pickled onions, a handful of pickled gherkins, and spread them around the platter.

Step Five

In a serving spoon or a small dish, portion out a tablespoon of apple chutney and a teaspoon of whole grain mustard for every person. Place these condiments next to the rolls on the platter.
