What You’ll Need
- 1.5 cups of Arborio rice
- 5 cups of vegetable broth
- 2 tablespoons of olive oil
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon of fresh clary sage, finely chopped
- 0.5 cup of dry white wine
- 2 cups of mixed summer fruit (berries, peaches, apricots, etc.), diced
- 1 cup of unsweetened almond milk
- Zest of 1 lemon
- Salt to taste
- Black pepper to taste
- Optional: fresh sage leaves for garnish
Method
Step One
In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion and cook until it becomes translucent, about 5 minutes. Stir in the minced garlic and cook until fragrant.
Step Two
