Hailing from the Canadian tradition, this exquisite vegan treat encapsulates everything I adore about food – nature’s bounty, unique flavors, and the opportunity to infuse a pinch of my personal style into each recipe.

The Charm of Saskatoon Berries

Saskatoon berries, I believe, are akin to a gift from nature. Plump with a delectable sweetness and a hint of nuttiness, they transport any recipe to new heights (source). While my Louisiana upbringing and French ancestry incline me towards more classic sweets like éclairs, the versatility and vibrancy of these Canadian gems beckoned me right away.

Inspiration & Creation

A nod to one of my favourite chefs, Angela Liddon, who inspires the vegan cuisine universe with her innovative creations, this recipe resonates with her knack for balance in health and flavour. This Vegan Saskatoon Berry Chia Parfaits with Granola & Coconut Drizzle is a delightful twirl of several elements – the tart Saskatoon berries, the creaminess of the almond milk, the crunch from the granola and coconut shavings, the aroma of the vanilla extract, all finished with an enticing drizzle of coconut milk and sweet agave syrup.

Bringing the Recipe to Life

Creating this parfait, despite appearing sophisticated, is rather straightforward. The recipe calls for 4 cups of Saskatoon berries, 3 cups of unsweetened almond milk, a generous cup of vegan granola, 2/3 cup of coconut shavings, 1/2 cup each of pure maple syrup and chia seeds, 2 tsp vanilla extract, and a tsp of lemon zest, rounded with a concoction of 1/2 cup of coconut milk and 1/4 cup of agave syrup for the indulgent drizzle.

With just the right elements in balance, this recipe of Vegan Saskatoon Berry Chia Parfaits with Granola & Coconut Drizzle is a true testament of my gastronomic adventure – an ode to global flavors that I relish and the ever-evolving array of inclusive recipes that I aim to create and foster.

What You’ll Need

  • 4 cups Saskatoon berries (or any other kind of berry)
  • 3 cups unsweetened almond milk
  • 1 cup vegan granola
  • 2/3 cup coconut shavings
  • 1/2 cup pure maple syrup
  • 1/2 cup chia seeds
  • 2 tsp vanilla extract
  • 1 tsp lemon zest
  • 1/2 cup coconut milk for the drizzle
  • 1/4 cup agave syrup for the drizzle
ALLERGENS: Tree nuts (almonds, coconut)

Method

Step One

Start by taking a large bowl and combine the 4 cups of Saskatoon berries, 1/2 cup of pure maple syrup, and 1 tsp of lemon zest. Gently mix these ingredients together until the berries are fully coated with the syrup and zest. Set this aside to let the flavors meld together.

Step Two

In a separate bowl, combine the 3 cups of unsweetened almond milk, 1/2 cup of chia seeds, and 2 tsp of vanilla extract. Stir well until the chia seeds are dispersed throughout the liquid and not clumped together. This mixture will form the base of your chia parfait. Let this sit for at least 30 minutes, stirring occasionally, to allow the chia seeds to absorb the almond milk and swell up.

Step Three

While the chia mixture is resting, make the coconut drizzle by combining 1/2 cup of coconut milk and 1/4 cup of agave syrup in a small saucepan. Heat over medium-low heat, stirring constantly, until the mixture is well combined and slightly reduced. Let it cool.

Step Four

Now it’s time to assemble your parfaits. Grab four glasses and divide half of the chia mixture equally among them, forming the first layer. Top this with a layer of the Saskatoon berry mixture, followed by a layer of vegan granola. Repeat these layers with the remaining chia, berry, and granola mixtures.

Step Five

Finally, sprinkle the parfaits with the coconut shavings and drizzle them with the cooled coconut drizzle. Serve immediately or cover and refrigerate until you’re ready to eat. Enjoy!
