What You’ll Need

  • 1 1/2 cups of dried figs
  • 3/4 cups of boiling water
  • 1 1/2 cups of whole wheat flour
  • 1/2 cup of sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • 1/2 cup of almond milk
  • 1/2 cup of unsweetened applesauce
  • 1 cup of breadcrumbs
  • 3 tablespoons of flaxseed meal combined with 9 tablespoons of water (flax egg)
  • 1/2 cup of chopped walnuts
  • 1/4 cup of maple syrup for drizzle
ALLERGENS: Whole wheat flour, almond milk, walnuts

Method

Step One

Chop the dried figs and place them into a heat-resisting bowl. Pour the boiling water over the figs and let them steep for about 10 minutes until they are plump and soft. This rehydrates the dried figs and makes them easier to blend into the mixture.

Step Two

In a large bowl, mix together the whole wheat flour, sugar, baking powder, and salt. This will be your dry mix.

Step Three

Make the flax eggs by mixing the flaxseed meal with the water, let this mixture sit for about 5 minutes until it thickens.

Step Four
