What You’ll Need
- 3 cups of cooked jasmine or short-grain rice
- 2 tablespoons of vegetable oil
- 3 cloves of garlic, minced
- 1 small red onion, thinly sliced
- 2 medium carrots, finely diced
- 1/2 cup of frozen green peas
- 1 cup of diced bell peppers
- 1 tablespoon of soy sauce
- 1/2 tablespoon of dark soy sauce
- 1/4 teaspoon of white pepper
- 3 tablespoons of dried seaweed, soaked and chopped
- 4 scallions, thinly sliced (for garnishing)
Method
Step One
Prepare all your ingredients: cook your rice, mince your garlic, thinly slice your red onion, finely dice your carrots, dice your bell peppers, slice your scallions and soak and chop your dried seaweed.
Step Two
On medium heat, heat the vegetable oil in a frying pan. Once it’s hot, add in your garlic and saute until it’s fragrant.
Step Three
Add the sliced red onion to the pan, continue to saute until the onion becomes soft and golden.
Step Four
Mix in the diced carrots and let it cook for about 3-4 minutes. Then, add in the frozen green peas and diced bell peppers, stir well and allow to cook for another 2-3 minutes.
Step Five
Now is the time to add your cooked rice to the vegetable mixture in the pan, stir thoroughly to combine. After the rice is well mixed with the vegetables, pour in the soy sauce, dark soy sauce and sprinkle over the white pepper. Stir again to mix well.
Step Six
Add in the soaked and chopped dried seaweed, stir to combine. Continue to cook for about 2 minutes more, so the seaweed can release its flavor into the rice while it heats through.
Step Seven
