Why I Love Portuguese Vegan Spinach and Cheese Quiche

Vegan Spinach and Cheese Quiche

There is something serenely satisfying about taking a classic recipe and giving it a contemporary twist, and that’s exactly what we’ve done with the Vegan Spinach and Cheese Quiche. This recipe, of Portuguese origin, allows you to savor this traditional European dish, but with a plant-based flair that’s as inviting to your taste buds as it is considerate to our animal friends.

A Midwesterner’s Take on a European Classic

Now, you might think that a Nebraska-born Midwesterner like myself would lean towards dishes that are loaded with hearty stews and corn casseroles. Well, you’d be right. But my culinary expeditions over the years led me to this magnificent Portuguese recipe. It was Jamie Oliver, the renowned British chef, who first inspired me to experiment with vegan dishes, and this recipe is the tangible result of that journey.

This vegan quiche is delicate yet robust – supple yet hearty – it delicately straddles the line between strength and subtlety, much like the cornfields that stretch across the old Nebraskan plains. I love the robust flavors of this quiche, the way the creamy tofu merges with the mild bitterness of fresh spinach, all wrapped up in a homely crust.

An Ideal Companion to Complementary Dishes

The beauty of this Vegan Spinach and Cheese Quiche is that it isn’t just a standalone dish – it’s a veritable social butterfly of the culinary world. It effortlessly complements a variety of other dishes, making it a versatile addition to your culinary repertoire. You can serve it alongside a crisp, fresh salad for a light lunch, or pair it with a robust vegan paella for a hearty, well-rounded meal.

So, whether you’re a seasoned vegan or just a curious foodie looking for an exciting new dish to add to your cooking rotation, I fully endorse this recipe. It perfectly captures the essence of vegan cooking, combining simplicity, sustainability and, most importantly, satisfaction in every slice. Give this Vegan Spinach and Cheese Quiche a try – it’s a slice of plant-based paradise you’ll gladly come back to again and again.

What You’ll Need

  • 1 pre-made vegan pie crust
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 3 cups fresh spinach, chopped
  • 14 ounces of silken tofu
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons nutritional yeast
  • 1 teaspoon turmeric
  • 1 teaspoon black salt (Kala Namak)
  • 1/4 teaspoon nutmeg
  • 1 cup vegan cheese, shredded
  • Salt and pepper to taste
ALLERGENS: wheat (in vegan pie crust), soy (in silken tofu, vegan cheese), nuts (in almond milk, vegan cheese)

Method

Step One

Preheat your oven to 375 degrees F (190 degrees C) and gently place the pre-made vegan pie crust into your chosen pie dish.

Step Two

Heat the olive oil in a large pan over medium heat. Once the oil is warm, add the chopped onion and minced garlic. Cook until they become translucent.

Step Three

Add the chopped spinach to the pan and continue to cook until the spinach has wilted. Remove the pan from the heat and set aside.

Step Four

In a blender or food processor, combine the silken tofu, almond milk, nutritional yeast, turmeric, black salt, and nutmeg. Blend until the mixture is smooth.

Step Five

Transfer the tofu mixture into a large bowl. Stir in the cooked onion, garlic, and spinach, along with the shredded vegan cheese. Season with salt and pepper according to your taste preference.

Step Six

Pour the tofu mixture into the prepared pie crust. Use a spatula to spread the mixture evenly across the pie.

Step Seven

Place the quiche in the preheated oven and bake for about 30-35 minutes, or until the crust is golden and the filling is set.

Step Eight

Allow the quiche to cool slightly before slicing and serving. Enjoy your Vegan Spinach and Cheese Quiche!
