This particular recipe marries my love for traditional New England cuisine with a classic Canadian breakfast dish called toutons. Though I grew up feasting mostly on seafood dishes, expanding my culinary horizons and incorporating the meatless and dairy-free ingredients of this vegan recipe was an exciting challenge. What You’ll Need

  • 6 large vegan buns
  • 2 cups non-dairy milk (like almond, soy, or oat milk)
  • 1 cup chickpea flour
  • 1 tablespoon ground flaxseeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 2 tablespoons vegan butter for frying
  • 1 cup pure Canadian maple syrup
  • Fresh berries for garnish (optional)
  • Powdered sugar for garnish (optional)
ALLERGENS: Gluten (in vegan buns), soy (if soy milk is used), tree nuts (if almond milk is used)

Method

Step One

First, take your vegan buns and cut them into thick slices. Set them aside for now

Step Two

In a large mixing bowl, combine the non-dairy milk, chickpea flour, ground flaxseeds, vanilla extract, ground cinnamon, ground nutmeg and a pinch of salt. Whisk everything together until the mixture is smooth and well combined.

Step Three

Take each slice of vegan bun and dip it into the mixture. Make sure each slice is well-coated with the batter on all sides. Once a slice is coated, let the excess batter drip off and then place the slice onto a separate plate or tray. Repeat this process with all the slices.

Step Four

Heat up a large frying pan on medium heat. Add the vegan butter and allow it to melt, making sure it coats the entire surface of the pan.

Step Five

Once the butter is melted, start frying the batter-coated slices. Fry each slice until it’s golden-brown and crispy. Remember to flip each slice halfway through to ensure both sides are properly cooked.

Step Six

When all slices are cooked, serve your Vegan Touton French Toast warm. Drizzle some pure Canadian maple syrup over each serving, and garnish with fresh berries and a dusting of powdered sugar if desired. Enjoy!
