What You’ll Need

  • 1 large Winter Melon (about 3 lbs)
  • 6 cups of vegetable broth
  • 1 cup of split mung beans (pre-soaked for 2 hours)
  • 2 large carrots, sliced into rounds
  • 1 cup of chopped celery
  • 1 medium onion, chopped
  • 4 cloves of garlic, minced
  • 1/2 cup of chopped cilantro
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of Salt
  • 1 teaspoon of ground black pepper
  • 2 teaspoon of turmeric powder

Method

Step One

Start by peeling the winter melon, removing its seeds, and cut it into 1-inch cubes. Set aside.

Step Two

Heat the vegetable oil in a large pot over medium heat. Once heated, add the chopped onion, minced garlic, and saute until the onions are translucent and the garlic is fragrant. This should take about 2-3 minutes.

Step Three

Add the sliced carrots and chopped celery to the pot, and cook for another 2-3 minutes until the vegetables are slightly softened.

Step Four

Drain the pre-soaked mung beans and add them to the pot. Stir to combine with the other vegetables.

Step Five
