What You’ll Need
- 1 tablespoon Olive Oil
- 2 cloves Garlic, minced
- 1 medium Onion, chopped
- 2 medium Carrots, sliced
- 2 stalks Celery, chopped
- 1 medium Bell Pepper, chopped
- 2 medium Zucchini, chopped
- 2 medium Tomatoes, diced
- 1 ½ cups Green Beans, chopped
- 6 cups Vegetable Stock
- 2 tablespoons fresh Clary Sage, finely chopped
- Salt and Pepper to taste
Method
Step One
Firstly, heat the olive oil in a large pot over medium heat. Once heated, add the minced garlic and chopped onion to the pot. Sauté these ingredients until the onion becomes translucent, usually after about 5 minutes.
Step Two
Next, add the sliced carrots, chopped celery, and chopped bell pepper to the pot, stir these in with the onions and garlic. Cook these vegetables for another 5 minutes until they begin to soften.
Step Three
At this point, you can add the chopped zucchini, diced tomatoes, and chopped green beans to the pot. You should stir these thoroughly with the other ingredients, and let them cook for a further 5 minutes.
Step Four
Now, carefully pour in the vegetable stock into the pot. Raise the heat to high and let the soup come to a boil. Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for about 20 minutes.
Step Five
After the soup has simmered, you can add the finely chopped Clary Sage to the pot. Stir this through until it has dispersed evenly throughout the soup. Lastly, season the soup with salt and pepper to taste before serving.
