What You’ll Need

  • 8 cups vegetable broth
  • 1 large bunch of collard greens, stems removed and leaves chopped
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 can (15 ounces) white beans, drained and rinsed
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil
  • 1 lemon, juiced

Method

Step One

In a large pot, heat the olive oil over medium heat. Once heated, add the diced yellow onion, minced garlic, chopped carrots and chopped celery. Cook until the onion is translucent and the vegetables have started to soften. This should take approximately 5-7 minutes.
