Vegetarian Sage and Onion Stuffing

A Nod to Comfort with a Twist of Health

As someone who loves the comforting food of my Nebraskan roots, this vegetarian stuffing is close to my heart. But it’s not just about the comfort. The apple in this recipe, alongside the wholesome garlic and onions, makes this dish a real wealth of nutrients, each bringing their share of health benefits. Apples are known for their high fiber and vitamin C content, whilst onions are renowned for their anti-inflammatory effects. Not to mention, garlic, a nutritional powerhouse packed with potential health benefits including better heart and immune system function.

Pairing Pleasures

This Vegetarian Sage and Onion Stuffing lives up to its promise of versatility. Just as the best Midwestern recipes do. The hearty flavours pair beautifully with a plate of roasted vegetables, think aubergine and bell peppers, for a burst of garden-fresh goodness. Or if you’re after a slightly meaty texture, a side of Portobello mushrooms grilled to perfection would be a delightful pairing. It’s also reminiscent of classic corn casseroles, and for the traditionalists, works brilliantly alongside a roast turkey or chicken.

But the beauty of this recipe is that it stands strong on its own. It’s more than just a stuffing, it’s a celebration of the beautiful, fresh produce we are blessed with.

Whatever way you choose to serve it, I can assure you it’s a recipe you’ll return to time and time again. So, gather your loved ones, say grace if that’s your tradition, and enjoy this delicious Vegetarian Sage and Onion Stuffing straight from the heart of America.

What You’ll Need

  • 9 cups diced white bread
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large apple, peeled and diced
  • 1/2 cup chopped fresh sage leaves
  • 1/2 cup chopped fresh parsley
  • 1 tsp salt
  • 1 tsp black pepper
  • 1.5 cups vegetable broth
ALLERGENS: Wheat, Garlic

Method

Step One

Preheat your oven to 375°F (190°C) and under a bit of olive oil, place your diced white bread on a baking sheet and toast for approximately 10 to 15 minutes, or until golden brown.

Step Two

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and minced garlic to the skillet and sauté until the onion is translucent and the garlic is fragrant, which should take about 8-10 minutes.

Step Three

Add the peeled and diced apple to the skillet and continue to cook for another 5-6 minutes, or until the apple has softened.

Step Four

Mix in the chopped fresh sage leaves, parsley, salt, and black pepper. Stir well to combine all the ingredients and let it cook for another minute or two.

Step Five

Remove the skillet from the heat. In a large bowl, combine the toasted bread cubes and the vegetable, apple, and sage mixture. Pour the vegetable broth over the mixture to moisten the bread. Stir everything together until well combined.

Step Six

Transfer the stuffing to a baking dish, cover with foil, and bake in the preheated oven for about 30 minutes. Then, remove the foil and continue baking for another 10 to 15 minutes, or until the top is crispy and golden.

Step Seven

Let your Vegetarian Sage and Onion Stuffing cool for a few minutes before serving. Enjoy this delicious accompaniment to your favourite vegetarian dishes and salads!
