What You’ll Need
- 12 whole wheat tortillas
- 2 cups sheep sorrel, chopped
- 2 large avocados, pitted and sliced
- 1 large mango, peeled and diced
- 1 large red onion, sliced thinly
- 1 cup fresh pineapple, diced
- 1/4 cup olive oil
- 1/2 cup fresh cilantro, chopped
- 2 limes, juiced
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground pepper
Method
Step One
Firstly, prepare all of your ingredients. Chop the sheep sorrel, pit and slice the avocados, peel and dice the mango, slice the red onion, dice the pineapple, chop the cilantro, and juice the limes. Set these ingredients aside.
Step Two
Next, heat the olive oil over medium heat in a large pan. Once hot, add in the sliced red onion. Sauté until the onion is translucent and fragrant.
