My Southern heritage meets a tropical, healthful twist in one of my personal favorite recipes: Vegetarian Sheep Sorrel Tacos. Now, you may be thinking, where’s the fried chicken, Emily? Where are the biscuits? Well, believe me when I say, stepping out of my Southern comfort zone and experimenting with diverse ingredients like sheep sorrel and exotic fruits allows me to invigorate tradition with a unique flair only possible when we dare to get a little adventurous in the kitchen.

Vegetarian Sheep Sorrel Tacos

Experiencing New Flavors

These Vegetarian Sheep Sorrel Tacos are not your typical tacos, but they are an absolute taste revelation. We’re talking about a truly light, fresh, and punchy flavor combination that’ll have you questioning why you didn’t swap beef for sheep sorrel sooner. And, not to brag, but when it comes to pairing the tartness of sheep sorrel with the creaminess of the avocado, the sweetness of the mango, and the hint of acidity from the pineapple and lime juice – well, let’s just say I’ve got it down to an art.

Health Benefits Ahoy!

But it’s not just about zest and flavor fun. Oh no, there’s a bonus to this South meets the tropics combo – it’s packed full of health benefits. Sheep sorrel is loaded with Vitamins A, B complex, C, D, K, and E. It’s also rich in minerals like magnesium and potassium. The antioxidants in this verdant herb may offer protection against cellular damage and inflammation. The avocados and olive oil lend this dish a hearty helping of healthy fats, while the range of fruits, from mango to pineapple, are high in essential vitamins and dietary fiber. Meanwhile, the citrusy zing of lime juice not only adds to the taste sensation but may also aid in digestion.

Taco Pairing Perfection

These Vegetarian Sheep Sorrel Tacos would make the ideal partner for my famous Spicy Black Bean and Corn Salsa, or you could serve it up with a side of Mexican Green Rice for a meal that’s truly bursting with color and wholesome flavor.

So, whether you’re a seasoned vegetarian or just on the lookout for meat-free meals, remember, delicious doesn’t always have to mean deep-fried or slathered in butter (though that’s undeniably divine at times!). With these Vegetarian Sheep Sorrel Tacos, you can enjoy the vibrant mix of flavors, winning combination of textures, and the elation of knowing you’re feeding your body something that’s as nutritious as it is delicious. Now, isn’t that something to taco ‘bout?

What You’ll Need

  • 12 whole wheat tortillas
  • 2 cups sheep sorrel, chopped
  • 2 large avocados, pitted and sliced
  • 1 large mango, peeled and diced
  • 1 large red onion, sliced thinly
  • 1 cup fresh pineapple, diced
  • 1/4 cup olive oil
  • 1/2 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
ALLERGENS: wheat

Method

Step One

Firstly, prepare all of your ingredients. Chop the sheep sorrel, pit and slice the avocados, peel and dice the mango, slice the red onion, dice the pineapple, chop the cilantro, and juice the limes. Set these ingredients aside.

Step Two

Next, heat the olive oil over medium heat in a large pan. Once hot, add in the sliced red onion. Sauté until the onion is translucent and fragrant.

Step Three

Add the chopped sheep sorrel to the pan with the sautéed red onion. Cook, stirring occasionally, until the sheep sorrel is wilted.

Step Four

In a large bowl, combine the cooked sheep sorrel and onion mixture with the sliced avocados, diced mango, diced pineapple, chopped cilantro, lime juice, sea salt, and freshly ground pepper. Stir until everything is well combined.

Step Five

Heat the whole wheat tortillas in a pan over medium heat until they’re warm and slightly crispy. Then, equally divide the sheep sorrel mixture among the tortillas.

Step Six

Finally, serve the Vegetarian Sheep Sorrel Tacos warm, with extra lime wedges on the side if desired. Your delicious and healthy meal is ready to be enjoyed!
