- 3 cups cooked brown rice
- 1 pound firm tofu, cubed
- 2 tablespoons light soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 teaspoons brown sugar
- 1 tablespoon freshly grated ginger
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 large mango, diced
- 1/2 large cucumber, diced
- 2 large avocados, peeled and diced
- 1 cup fresh pineapple, diced
- 1 cup edamame, shelled and cooked
- 3 green onions, chopped
- 1/4 cup fresh cilantro, minced
- 1/4 cup diced red onion
- 2 tablespoons sesame seeds
Method
Step One
Begin by prepping all ingredients. Cook the brown rice and while it cools, cube the tofu, dice the mango, cucumber, avocados, pineapple and red onion, chop the green onions, mince the fresh cilantro, and shell and cook the edamame. Set these aside.
Step Two
In a small bowl, combine the light soy sauce, sesame oil, rice vinegar, brown sugar, freshly grated ginger, minced garlic, and red pepper flakes to create the tofu marinade.
Step Three
Put the cubed tofu in the marinade and ensure all pieces are thoroughly coated. Let it sit for at least 10 minutes to absorb the flavours.
