What You’ll Need

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 medium carrots, grated
  • 1 medium zucchini, grated
  • 1 cup of mushrooms, finely chopped
  • 1 cup of cooked lentils
  • 1 cup of breadcrumbs
  • 2 tbsp tomato ketchup
  • 2 tbsp soy sauce
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 3 sheets of puff pastry
  • 3 tbsp sesame seeds
  • 1 egg, lightly beaten (for egg wash)
ALLERGENS: Gluten (in breadcrumbs and puff pastry), Soy (in soy sauce), Sesame (in sesame seeds), Egg

Method

Step One

Preheat your oven to 200 degrees Celsius (180 degrees Celsius fan-forced) and line two baking trays with baking paper.

Step Two

In a frying pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until the onion is translucent.

Step Three

Add the grated carrots and zucchini to the pan and continue to cook for another 2-3 minutes. Then add the finely chopped mushrooms and cook until the vegetables are softened.

Step Four

Add the cooked lentils, breadcrumbs, tomato ketchup, soy sauce, smoked paprika, and salt and pepper to the pan. Stir to combine all the ingredients. Take the pan off the heat and let the mixture cool.

Step Five

While the veggie mixture is cooling, cut each sheet of puff pastry into four squares. Then, spoon a line of the veggie mixture down one side of each pastry square.

Step Six

Roll up the pastry to enclose the filling, finishing seam side down. Place the rolls on the prepared baking trays.

Step Seven

Brush each sausage roll with the beaten egg and sprinkle over the sesame seeds. Make small cuts in the top of each roll.

Step Eight

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and the filling is heated through. Let the veggie sausage rolls cool slightly before serving.
