What You’ll Need

  • 4 large Vidalia onions, thinly sliced
  • 1 cup granulated sugar
  • 1 cup red wine vinegar
  • 1 cup red wine
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup fresh orange juice
  • Zest of 1 orange

Method

Step One

Begin by heating the olive oil in a large saucepan over a medium heat. Once the oil is hot, add the sliced Vidalia onions. Cook the onions until they become soft and start to turn translucent. This should take around 10-15 minutes.

Step Two

Add the minced garlic to the saucepan and stir it continuously. Cook for around 2-3 minutes until the garlic becomes fragrant.

Step Three

Mix in the granulated sugar, red wine vinegar, red wine, finely chopped rosemary and thyme, salt and ground black pepper. Increase the heat and bring the mixture to a boil.

Step Four

Once boiling, reduce the heat to low and leave the mixture to simmer. Continue to simmer until the mixture has thickened and turned syrupy. This will take approximately 1 hour. Be sure to stir the mixture every 10 minutes or so to prevent it sticking to the bottom of the pan and burning.

Step Five

Remove the saucepan from the heat. Stir in the fresh orange juice and the orange zest. Leave the jam to cool for a little while before transferring it to clean, sterilized jars.

Step Six

Seal the jars and store in a cool dark place or in the fridge. Allow the jam to cool completely before you use it. It can be stored for up to 1 month in the refrigerator.
