Vietnamese Coriander and Beef Stir-fry

A Fusion of Flavors

Growing up in New Jersey, my cooking was heavily influenced by my Italian grandparents. While my heart will always belong to beloved dishes like spaghetti and meatballs, exploring global flavors has become a passion of mine over the years. This Vietnamese Coriander and Beef Stir-fry is a delightful departure from those cherished Italian-American meals, yet it feels just as homey and comforting.

The use of beef sirloin makes this dish incredibly hearty, while the combination of soy sauce, fish sauce, and oyster sauce provides a savory umami flavor that is distinctive of many Southeast Asian cuisines. You might find it reminiscent of dishes like Beef and Broccoli or even a delicate Thai Basil Stir-fry, but the addition of Vietnamese coriander gives it a signature twist that sets it apart.

Health Benefits

Beyond the incredible flavors, this stir-fry is packed with ingredients that bring great health benefits to the table. Beef sirloin is a fantastic source of protein and vital nutrients like iron and zinc, which contribute to muscle growth and overall immunity. Bell peppers and onions are loaded with vitamins and antioxidants, adding a rainbow of nutrients that promote good health.

Vietnamese coriander, often considered a potent herb, not only adds a burst of flavor but also carries health benefits, such as aiding in digestion and providing anti-inflammatory properties. For those who enjoy a bit of heat, the optional red chili can boost metabolism and endorphin levels, making every bite not only pleasurable but also beneficial.

Complementary Dishes

This Vietnamese Coriander and Beef Stir-fry is perfect over a bed of freshly cooked jasmine rice, which absorbs all the flavorful sauces beautifully. For a truly extravagant meal, consider pairing this dish with a light and tangy Vietnamese Papaya Salad or a hearty bowl of Pho for a complete dining experience that showcases the rich culinary traditions of Vietnam.

Whether you’re igniting a new love for global dishes or adding variety to your weeknight dinners, this stir-fry is sure to become a favorite. The balance of savory, sweet, and tangy elements, coupled with the fresh crunch of vegetables, makes it a dish you’ll return to time and again.

What You’ll Need

  • 1 ½ pounds beef sirloin, thinly sliced
  • 3 tablespoons vegetable oil
  • 6 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sugar
  • 1 teaspoon freshly ground black pepper
  • 2 bell peppers (any color), thinly sliced
  • 1 large onion, thinly sliced
  • 1 bunch fresh Vietnamese coriander leaves, chopped
  • 3 green onions, sliced
  • 1 fresh red chili, thinly sliced (optional)
  • Cooked jasmine rice, for serving
  • Lime wedges, for serving
ALLERGENS: Soy, fish, shellfish

Method

Step One

In a large bowl, combine the beef sirloin, soy sauce, fish sauce, oyster sauce, sugar, and black pepper. Mix well to ensure the beef is evenly coated. Let the beef marinate for at least 15 minutes to absorb the flavors.

Step Two

Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.

Step Three

Add the marinated beef to the wok and stir-fry for 3-5 minutes until the beef is almost cooked through. Remove the beef from the wok and set aside.

Step Four

In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the thinly sliced bell peppers and onion. Stir-fry for about 3-4 minutes until the vegetables are slightly tender but still crisp.

Step Five

Return the beef to the wok. Add the chopped Vietnamese coriander leaves, green onions, and sliced red chili (if using). Stir-fry for another 2 minutes, allowing the flavors to meld together.

Step Six

Serve the Vietnamese coriander and beef stir-fry over cooked jasmine rice. Garnish with lime wedges on the side for a zesty finish.
