What You’ll Need
- 12 slices of whole grain bread
- 2 ripe avocados
- 1 lemon, juiced
- 1 bunch of watercress, washed and dried
- 3 tablespoons olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 6 slices of Monterey jack cheese (optional)
Method
Step One
First, prepare the avocados. Cut the avocados in half, remove the pits and scoop out the flesh into a medium bowl. Using a fork, mash the avocado until smooth and to your desired consistency. Mix in the juice from the lemon to prevent browning and set aside.
Step Two
Next, prepare the watercress. In another bowl, toss the watercress with olive oil, salt, and pepper.
Step Three
When the avocados and watercress are ready, it’s time to assemble the sandwiches. Take one slice of whole grain bread and spread a generous amount of the mashed avocado. Then, layer with the seasoned watercress.
Step Four
If using, add a slice of Monterey jack cheese on top of the watercress. Cover with another slice of bread. Repeat this process with the remaining slices of bread and fillings until you have six full sandwiches.
