What You’ll Need

  • 1 cup of wattleseeds
  • 6 cups of water
  • 2 tablespoons of honey
  • 3 bananas
  • 3 cups of milk
  • 1/2 cup of sugar
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla extract

Method

Step One

Start by soaking the wattleseeds in 1 cup of the water. Leave them to soak for around 2 hours – they should double in size.

Step Two

Peel and chop the bananas into small pieces. Set these aside for later.

Step Three

After the wattleseeds have finished soaking, drain off the water. Then add them to a large saucepan with the remaining 5 cups of water.

Step Four

Bring the water and wattleseeds to a boil, then reduce the heat to low and simmer, stirring occasionally, for around 45 minutes or until the wattleseeds are tender.

Step Five

Next, add the milk, sugar, and salt to the saucepan, stirring until the sugar is fully dissolved. Cook the porridge on low heat for about 15-20 minutes, until it thickens. Make sure to keep an eye on it to ensure it doesn’t overflow!

Step Six

Next, stir in the chopped bananas, honey, and vanilla extract, cooking for a further 5 minutes until the bananas are warm and slightly softened.

Step Seven
