Welsh Onion and Chicken Soup: A Cousin from Across the Pond
The Welsh Onion and Chicken Soup is a recipe close to my heart since it combines some of the elements that remind me of home – chicken, comfort, and a hefty dose of vegetables. But there’s more to it than that. This soup, while steeped in tradition from a different part of the world, shares much with some of my beloved Southern staples. Its brothy goodness is reminiscent of classic chicken soups I grew up with in Charleston, South Carolina. Yet it brings a unique twist with the introduction of Welsh onions, an ingredient that impacts the dish with an unmatched depth of flavor.
Cozy and Comforting: Chicken Soup, Elevated
This Welsh Onion and Chicken Soup is the perfect antidote to a chilly evening or a comfort craving. It carries an array of delightful flavors – the sweetness of carrots, the punch of garlic, and a hint of acid from lemon juice that ties it all together. The bay leaf and herbs envelop you in warmth, much the same way as pulling on a favourite sweater, or returning to a beloved film at the cinema.
As a southerner, we don’t shy away from a hearty meal, and this dish stands up as a fantastic main. But it would also work well paired with a light, buttery biscuit or even as a starter for an extravagant seafood feast, a nod to my fondness for the coastal flavors I’ve known since my youth. It’s a soup that knows the power of being versatile, and as such, tends to pay its own tribute to the coastal surfing spots of South Carolina.
For the Love of Health and Flavor
And lest we forget, another reason this recipe has captured my heart is, as much as it is about tradition and comfort, it’s equally about health. This Welsh Onion and Chicken Soup is packed with vitamins and immune-boosting power – a welcome energy boost after an adventurous day, may that be surfing or taking a leisurely stroll down the lanes of my beloved hometown.
The addition of a cup of peas, although optional, comes highly recommended – not only do they add consistency and sweet overtones to the mix, but they support digestive health says Healthline. Garlic, a super food on its own, is known for its potential medicinal properties BBC Good Food mentions. Whenever I serve this soup, I always feel good knowing that it’s comfort food that also promotes well-being.
In essence, this Welsh Onion and Chicken Soup speaks a universal language of warmth and flavor. It echoes cherished heirlooms from the South, yet introduces a uniquely global element. No matter where you’re from, or where you long to go, a bowl of this soup will always feel like home.
What You’ll Need
- 1 tablespoon Olive oil
- 6 Welsh onions (also known as spring onions)
- 2 cloves Garlic
- 1 pound Chicken breasts, boneless and skinless
- 6 cups Chicken stock
- 1 cup Carrots, chopped
- 1 cup Celery, chopped
- 1 Bay leaf
- Salt and Pepper to taste
- 2 tablespoons Lemon juice
- 1/2 cup Fresh herbs (like parsley or thyme), chopped
- 1 cup Peas, frozen (optional)
Method
Step One
Start by heating up the olive oil in a large soup pot over medium-high heat.
Step Two
Once the oil is hot, add the chopped Welsh onions and garlic to the pot. Cook these ingredients for about 2 to 3 minutes until they become tender and aromatic.

Next, add the chicken breasts to the pot. Cook the chicken thoroughly for about 5 to 7 minutes until there’s no pink left in the middle.
Step Four
Once the chicken is fully cooked, add the chicken stock, chopped carrots, chopped celery, and bay leaf into the pot. Stir everything together until well mixed.
Step Five
Add salt and pepper to your liking. Then, allow the soup to simmer for about 20 minutes.
Step Six
After the soup has simmered, add the lemon juice and chopped fresh herbs. You can also add the optional frozen peas at this point. Stir everything together.
Step Seven
Allow the soup to cook for another 10 minutes so all the flavors can meld together. After that, your Welsh Onion and Chicken Soup is ready to serve. Enjoy this hearty and comforting dish!
