What You’ll Need

  • 6 Welsh onions (also known as spring onions)
  • 2 cloves Garlic
  • 1 pound Chicken breasts, boneless and skinless
  • 6 cups Chicken stock
  • 1 cup Carrots, chopped
  • 1 cup Celery, chopped
  • 1 Bay leaf
  • Salt and Pepper to taste
  • 2 tablespoons Lemon juice
  • 1/2 cup Fresh herbs (like parsley or thyme), chopped
  • 1 cup Peas, frozen (optional)

Method

Step One

Start by heating up the olive oil in a large soup pot over medium-high heat.
