What You’ll Need
- 3 cups of jasmine rice
- 6 eggs
- 2 large Welsh onions (scallions can be used as a substitute)
- 3 tablespoons of vegetable oil
- 1.5 cups of diced mixed fruits (like pineapple, mangoes, and strawberries)
- Salt, to taste
- Pepper, to taste
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
Method
Step One
Cook the jasmine rice according to the package instructions. Once it’s cooked, fluff it with a fork and set it aside to cool.
Step Two
While the rice is cooking, take your Welsh onions and finely chop them. If you’re substituting with scallions, do the same.
Step Three
Crack your eggs into a bowl, season with salt and pepper to taste, and beat them until the yolks and whites are fully incorporated.
Step Four
In a large wok or frying pan, heat the vegetable oil over medium heat. Once the oil is hot, add in the chopped Welsh onions and stir-fry them for 2-3 minutes, or until they become fragrant and translucent.
Step Five
Pour the beaten eggs into the wok and scramble them with the onions. Continue to cook until the eggs are fully cooked.

Season the rice with the soy sauce and mix well. Continue to stir-fry the rice for another 2-3 minutes so the sauce fully incorporates with the rest of the ingredients.
Step Nine
Turn off the heat and drizzle the sesame oil over the fried rice. Mix it in well, then taste and adjust the seasoning if necessary.
