What You’ll Need
- 2 cups of long-grain parboiled rice
- 1/4 cup of vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, seeded and chopped
- 1/2 cup of finely chopped fresh tomatoes
- 6 ounces of tomato paste
- 1 teaspoon of curry powder
- 1 teaspoon of dried thyme
- 1/2 teaspoon of Cayenne pepper
- 6 Grains of Selim (also known as African Nutmeg or Guinea pepper), ground
- 1 teaspoon of salt
- 4 cups of chicken or vegetable broth
- 2 cups of mixed vegetables (like peas, carrots and bell peppers)
- 1 1/2 cup of chopped cooked chicken (optional)
- 2 bananas, sliced for garnish
- 1/2 cup of chopped fresh parsley for garnish
- Any other fruits you may like (optional).
Method
Step One
Begin by rinsing the long-grain parboiled rice under cold water until the water runs clear. This is to ensure that any excess starch is removed.
