Life on the Atlantic Coast has gifted me an immense love and appreciation for our bountiful seafood, but it has also opened my eyes to the diversity of food offerings that can be explored. One such recipe discovery of mine, that I absolutely adore, is the Wheatgrass and Pineapple Smoothie. A verdant, nutrient-packed and deliciously sweet concoction, this smoothie is nothing short of a revitalizing treat. A green, healthy alternative to my traditional seafood favorites.
Health in a Glass
The Wheatgrass and Pineapple Smoothie is a beautiful harmony of flavors and health benefits. Eating nothing but seafood and potatoes can be delicious, but the human body craves a balance of nutrients that comes from a variety of food groups. Wheatgrass makes this smoothie a wellness powerhouse, packed with vitamins A, C and E, as well as iron, calcium, magnesium, and amino acids. Combined with the vitamin C-loaded pineapple, potassium-rich bananas and sweet, antioxidant-friendly honey, this smoothie provides a myriad of health-promoting benefits from enhancing immunity to aiding digestion.
Familiar, with a Twist
While the Wheatgrass and Pineapple Smoothie is a delightful standalone treat, it reminds me a lot of one of my family’s beloved desserts – the classic pineapple banana bread. This smoothie brings the same comforting palette of flavors but with a nutrient-dense, refreshing twist. It also pairs beautifully with a light walnut and dried cherry bar for a wholesome breakfast or afternoon snack. On busy mornings when I can’t manage a sit-down breakfast with my daughters Erin and Samantha, I whip up this green smoothie to ensure we all start our day right.
Whether you’re a hard-core health enthusiast or a New England seafood lover looking for verdant variety, the Wheatgrass and Pineapple Smoothie offers a burst of nutrition and flavor. It’s a fresh sea breeze of the mainland, away from salty waters and into the lush green meadows.
What You’ll Need
- 2 cups fresh wheatgrass
- 3 cups fresh pineapple chunks
- 2 ripe bananas
- 2 tablespoons honey
- 2 cups ice cubes
- 2 cups of water or unsweetened almond milk
Method
Step One
Firstly, gather all your ingredients. Ensure your wheatgrass is fresh and your bananas are ripe for the perfect sweetness.
Step Two
Peel the bananas and cut them into smaller chunks. If you’re using a fresh pineapple, peel it, remove the core and cut it into chunks.
Step Three
Place 2 cups of fresh wheatgrass, 3 cups of fresh pineapple chunks, the chunks of two ripe bananas, 2 tablespoons of honey, and 2 cups of ice cubes in a blender.
Step Four
Add 2 cups of water or unsweetened almond milk. The choice between these two depends on your preference. While water will make the smoothie lighter, almond milk will give it a creamier texture.
Step Five
Blend the ingredients together on high speed until the mixture becomes smooth and creamy. This will typically take around 1-2 minutes, depending on your blender.
Step Six
Once everything is thoroughly blended and the smoothie is your desired consistency, pour your Wheatgrass and Pineapple Smoothie into glasses.
Step Seven
Enjoy immediately for the best taste and maximum health benefits!
