What You’ll Need

  • 1 sheet of puff pastry
  • 2 white onions
  • 2 tablespoons of olive oil
  • 1/2 cup of white wine
  • 1 cup of grated gruyere cheese
  • 1 cup of cream cheese
  • 2 eggs
  • 2 tablespoons of fresh thyme
  • Salt and pepper to taste

Method

Step One

Start by preheating your oven to 180 degrees Celsius or 350 degrees Fahrenheit. Unroll the sheet of puff pastry and place it on a 9-inch tart pan. Gently press the pastry into the corners of the pan and trim any excess pastry hanging over the edges. Place the pan in the fridge while you prepare the filling.

Step Two

Peel and slice the white onions. Heat the olive oil in a large frying pan over medium heat. Add the onions and cook until they are soft and starting to caramelise. This should take about 10 minutes.

Step Three

Pour in the white wine and continue to cook the onions until the wine has evaporated. Remove the pan from the heat and set aside to cool slightly.

Step Four

In a separate bowl, combine the grated gruyere cheese, cream cheese, eggs, fresh thyme, salt and pepper. Mix until all the ingredients are well combined.

Step Five

Remove the tart pan from the fridge. Spread the onion mixture over the base of the puff pastry. Pour the cheese mixture over the onions, making sure the filling is evenly distributed.

Step Six

Bake the tart in the preheated oven for 25-30 minutes or until the filling is golden and set. Allow the tart to cool in the pan for a few minutes before slicing and serving.
