This Wild Leek and Spinach Dip goes beyond your average dip. What You’ll Need
- 2 tablespoons olive oil
- 1 cup chopped wild leeks
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- 1 cup Greek yogurt
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
Method
Step One
Preheat your oven to 375°F (190°C). While your oven is heating up, heat 2 tablespoons of olive oil in a skillet over medium heat. Add 1 cup of chopped wild leeks to the skillet and sauté until they become soft and fragrant.
Step Two
Add 2 minced cloves of garlic to the skillet with the leeks. Continue to sauté for about 1 minute until the garlic aroma becomes well combined with the wild leeks.
Step Three
Add 2 cups of chopped fresh spinach to the skillet. Continue to cook the leek, garlic, and spinach mixture until the spinach wilts. This typically takes about 2-3 minutes.
Step Four
In a large bowl, combine 1 cup of Greek yogurt, 1/4 cup of mayonnaise, 1 tablespoon of lemon juice, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix until all of these ingredients are well combined.
Step Five
Add the sautéd leek, garlic, and spinach mixture to the yogurt mixture in the large bowl. Stir until all ingredients are fully incorporated.
Step Six
Add 1/2 cup of shredded mozzarella cheese and 1/2 cup of grated parmesan cheese to the bowl. Stir until the cheese is evenly distributed throughout the dip.
Step Seven
Transfer the dip mixture to a baking dish. Place the dish in your preheated oven and bake for 20-25 minutes, or until the dip is bubbly and golden brown on top.
