What You’ll Need

  • 1 bottle (750 ml) dry white wine
  • 2 sprigs of fresh wild thyme
  • 1 tablespoon honey

  • 1 shallot, finely chopped
  • 2 tablespoons of unsalted butter
  • Sea salt to taste
  • Freshly ground black pepper to taste

Method

Step One

Pour the entire bottle of dry white wine into a saucepan and set it on a stove. Heat the white wine over medium heat until it starts to simmer.

Step Two

Add the 2 sprigs of fresh wild thyme, 1 tablespoon of honey, and the zest of 1 lemon into the simmering wine. Give it a good stir until the honey dissolves completely.

Step Three

Squeeze the juice of 1 lemon into the simmering mixture and stir. This will give the wine sauce its citric undertone that complements perfectly with seafood.

Step Four

Next, add the minced garlic cloves and finely chopped shallot to the sauce. Stir all the ingredients until they are well blended. Allow this to simmer for about 5 minutes.

Once all the ingredients are infused, strain the mixture through a fine-mesh strainer into a bowl, making sure to press out as much liquid as possible. Discard the solids.
