What You’ll Need
- 2 cups of heavy cream
- 1 cup of whole milk
- 3/4 cup of sugar
- 1 bundle of fresh woodruff
- 6 egg yolks
- 1 teaspoon of vanilla extract
- 1 cup of mixed fresh berries (for topping)
- 2 tablespoons of lemon juice
Method
Step One
Firstly, take the woodruff bundle, rinse it well under cold water and tie it tightly. Place it in a saucepan along with the whole milk and bring it to a simmer over medium heat. When it begins to simmer, remove it from the heat, cover it and leave it to infuse for about an hour.
Step Two
After an hour, remove the woodruff bundle from the milk. Squeeze as much milk as possible out of it and discard it. Pour the milk back into the saucepan, add the heavy cream and sugar to it, and heat it over medium heat until it begins to steam but not boil.
Step Three
While the milk is heating, separate the egg yolks in a separate bowl. Once the milk begins to steam, gradually add it to the egg yolks while whisking them constantly to temper the yolks and prevent them from cooking.
Step Four
Return the mixture to the saucepan and cook it over low heat while stirring constantly until it thickens and coats the back of a spoon.
Step Five
Remove the custard from the heat and strain it through a fine mesh strainer into a bowl. Add the vanilla extract to the custard, mix it well and leave it to cool for a few minutes. After it has cooled, cover it and refrigerate it for at least 4 hours or overnight until it is completely chilled.
Step Six
After the custard is chilled, pour it into an ice cream maker and churn it according to the manufacturer’s instructions.

While the ice cream is churning, rinse the fresh mixed berries under cold water and pat them dry. In a separate bowl, mix the berries with the lemon juice and set them aside to macerate.
