What You’ll Need

  • 2 medium yacón roots, peeled and julienned
  • 2 large apples, peeled and julienned
  • 1/4 cup lemon juice
  • 1/4 cup Greek yogurt
  • 3 tablespoons mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions

Method
